（中央社記者鄭傑憶羅馬特稿）說起義大利菜餚，幾乎少不了番茄，從麵食、披薩到肉類、海鮮，都可以搭配。從南美洲來的豔麗果實，成為義大利的廚房要角。

煮熟麵條，拌上番茄醬汁，算是最簡單的義大利麵，講究一點，刨上一些帕瑪森乾酪（Parmigiano Reggiano），就可以祭五臟廟了。

因為本國需求大，義大利生產的番茄醬幾乎被當地消費者吃光光，而荷蘭、墨西哥和西班牙的出口量都超過義大利。

番茄形狀、顏色各異，最有名氣的應該是義大利的聖馬爾札諾（San Marzano）番茄，顏色橘紅飽滿，橢圓蛋形。

番茄來自南美洲的秘魯，亮麗豔紅的外表很誘人，16世紀末傳入義大利，被稱為pomodoro，意味著「黃金般」（d'oro）的果實。

可能是非常嬌貴，一開始番茄被當作裝飾用植物，一直到傳入義大利百年後，才開始入菜。但另有一說是，秘魯人認為番茄含毒，因此僅供觀賞。

一直到17世紀末，廣泛種植聖馬爾札諾番茄的拿波里地區，終於有廚師將番茄放進菜餚。

不過，一直到19世紀中，義大利人吃的多是「白麵條」，只在麵食上灑乳酪，有時為添加風味，會淋一些橘子汁。後來番茄醬蔚為風潮，但用上當時兩齒或三齒的叉子，醬汁很容易滴落，因此有人發明了現在常見的四齒叉子。

聖馬爾札諾被稱為番茄之王，風味佳，而且製成的醬汁濃稠，容易吸附在麵條上。用在披薩上時，也容易勻開，烘烤後餅皮仍舊香脆，道地的拿波里披薩指定要用上聖馬爾札諾番茄。

受盛名之累，冒稱聖馬爾札諾的番茄非常多。義大利「農牧協會」（Coldiretti）指出，2013年有不肖廠商從中國大陸進口番茄醬，加水和食鹽後，以義大利製造的名義售出，威脅不少誠實廠商的生存。

為了保護道地的聖馬爾札諾番茄，1996年申請為「原產地名稱保護」（DOP），並在2000年成為慢食組織的「保育食物」（Presidi），規定特定產地才能掛上聖馬爾札諾標示，而採收期間和方式都有嚴格規範。

台灣流傳著「番茄紅了，醫生的臉就綠了」廣告詞，宣傳這嬌豔果實的營養價值，不過，幾乎沒有義大利人聽過這句號稱是義大利的諺語。1040315
