中式料理中，有許多是會在最後灑上蔥花的習慣。
既可提香又可以讓賣相增色，但是這個做法卻有衛生上的顧慮。
因為可能存在寄生蟲的原因，使得生食蔥花存在風險，連帶中餐烹調技術士的時候也規訂蔥花必須經過熟食消毒之後才可食用。
但是在西式料理中也有許多香草類的食材，是以未經加熱的狀態呈現的，但是應該有有專業的法可以將食材消毒吧?
目前能想到消毒方法的有酒精或是紫外線消毒，但是這兩種方法對蔥管內側的處理似乎都不太方便，畢竟蔥管一旦切開就很難再切成蔥花了。
想請教一般西餐都如何對香草進行消毒的工作，或是否有方法可以對蔥管內側消毒?
